Newcastle based chef Martin Charlton is bringing 30 years catering experience to the Mizen. He is currently a chef lecturer at Tyne Metropolitan college and a director of his event catering company www.thefireinthehole.co.uk
An early supporter of locally produced artisan foods, Martin is well known for his cookery demonstrations at Northumberland larder events (The regional food and drink group for the North). His wild food cookery (Chapter 13 in Terry Leybourn’s Quest for taste), cookery schools, Wood fired ovens and anything else to do with creating great tasting, unreal, fabulous dishes consisting of locally produced ingredients.
A close friend of Ken, Cris and their children, Martin will be working with the family and staff to ensure customers of the Mizen Head enjoy a fabulous range of freshly prepared, and seasonal food.
Recently many chefs restaurateurs and hoteliers have jumped upon the local food band wagon, Martin and his close friends have been there from the start, working as a consultant advisor for many local producers. He understanding the hard work involved in creating dishes which will withstand food industry trends. All this experience, dedication and skill is arriving at the Mizen Spring 2008.
Needless to say Martin and the Mizen will be inviting our food heroes in for a chat!
